INGREDIENTS
1 cup boiled potato
1 medium boiled carrot
1/4 cup boiled peas
1/4 cup boiled American corn
1 finely chopped onion
1 tsp coriander powder
1 tsp garam masala
1 tsp oregano (optional)
1/2 tsp kasuri meethi (optional)
salt and chilli to taste
2 tbsp suji (semolina)
1/2 cup breadcrumbs
1 cup powdered cornflakes or breadcrumbs
5-6 chopped into 4 pieces cheese cubes
METHOD
Mix and mash together all the vegetables, add chopped onion, coriander powder, garam masala, oregano, kasuri meethi, salt and chilli. Take a taste test. If required add more spices according to your or your child's taste.
Add breadcrumbs. Mix well. If it's too loose add more breadcrumbs for binding.
Take small sized ball. Put cheese cube in it. Roll it and give it a desired shape. I used heart shape cutters.
Keep small ball inside the cookie cutter and spread it around it or make ball and simply press it with cookie cutter and smoothly pull up.
Deep fry on medium hot oil.
You can shallow fry, or cook in appe pan or bake at 180 degree for 10-15 minutes for healthier version.
For appe pan cooking, take medium sized ball, roll it, fill in cheese cube and cook in greased appe on low flame till crisp and golden in colour. This will take around 10-15 minutes.
Serve with easy cheesy dip, 1 minute homemade mayonnaise or tomato sauce.
