SPINACH CORN MINI TOAST

INGREDIENTS


1 cup washed and chopped spinach
1/4 cup corn
1 chopped onion
1 cup whole wheat flour white sauce
salt and chili to taste
6-7 bread slices
1/2 cup grated cheese (Mozzarella or processed) 

Snacks are important meal of day for kids specially in evening. It should be light and healthy. This is a quick and healthy option for kids evening snack.

I prefer to make white sauce in advance and store in fridge for a day. This ease my job. I make white sauce ONLY with whole wheat flour for more healthier option. If you wish you can use all-purpose flour.

Chop spinach finely as kids don't like those big leaves coming in mouth.

Both mozzarella and processed cheese can be used, but it should be on room temperature for better results.

I hope your kids will like this quick and yummy healthy snack as mine.


METHOD
Prepare white sauce and keep aside.

In a pan, saute onion till transparent, add chopped spinach with corn and let it cook on medium flame till spinach becomes dry and corn is cooked. Add salt and pepper. Be careful while adding salt since white sauce will also be having.

Now mix white sauce in cooked spinach. Cook for another 2-3 minutes or till it becomes thick.

Trim the edges of bread slices, cut it into desired shape with cutters. Toast it on pan, till little crisp. Keep spinach- white sauce  mix over it. Top it with cheese, cover and cook on low heat till cheese melts.

Serve this healthy and yummy snack to your little ones with tomato sauce.
