INGREDIENTS
The oil should be medium hot, too hot oil will burn it from outside and inside will be raw, cold oil will lead to hard doughnuts. So be very careful while frying.
Always fry 2-3 doughnuts at a time, wait for oil to become hot again. Then fry another batch of 2-3 doughnuts.
Remove doughnuts on tissue paper. Let it become cool down.
In a clean bowl, melt chocolate with butter and dip donuts from one side, keep it aside and let it set for 5 minutes. Garnish with sprinkler. Serve.

1. Dissolve 1 tbsp sugar and 2 tsp yeast in 1/2 cup warm water. Let it sit for 10-15 minutes or till it proves.

16. Melt in microwave or double boiler.
17. Dip the cold doughnuts. Make sure they are not hot.
18. Keep it on wire rack and let chocolate dry.

My kids love donuts, but being a mother, I never encouraged them to eat donuts from outside because of maida in it. I generally make donuts with 100% whole wheat flour, but this time I took a chance and added oats and whole wheat flour and some wheat flour.
Later for the blog addition I made Nutella Doughnuts which are made with 100% all-purpose flour. You can even check out that recipe.
Since oats are high in fibre it keeps our stomach well. I like to add as much oats as possible in my day to day cooking.
Dough made for donuts needs to twice rise in warm place.
First thing to keep in mind is your yeast. Use a high quality of yeast and after using keep the leftover in freezer.
Some yeast takes 5 minutes to rise and some take 10-15 minutes. In my case it took 15-20 minutes to rise. So be patient in this step. If you add yeast without proving donuts will not rise. If it doesn?t rise in 20 minutes, take another fresh packet and try again. There can many reasons of yeast not rising. One could be temperature of water. Ensure water should be WARM not hot or cold.
Another reason could be it's expiry date. So ensure these two basic things.
The dough for this needs to be proven or rise two times, firstly after combining all the ingredients and secondly after giving it a donuts shape. In first step take out the air by punching it well but in second case don't take out air.

METHOD

In a deep bowl, mix together powdered oats, whole wheat flour, powdered sugar and butter. Mix well. Add milk little by little combining all the ingredients. Combine to make smooth dough. The dough should be little soft.
Grease a bowl or container with oil well. Transfer the dough in greased bowl. Keep the bowl in warm place for rising for 2-3 hours.
After 2 hours take out the dough on clean working slab. Spread some flour on it and start taking out the air by punching the dough hard. If required, add some more flour if it is too loose and some more milk if too hard.
Roll the dough with rolling pin of medium thickness. Using cutter or bowl, take out the circles. Make hole inside it using cap of vanilla essence bottle.
Take donuts and deep fry. Be very careful and soft while handling proved doughnuts. Mishandling may lead to puncture air from it which will result in non-puffed doughnuts.
