PANEER OPEN SANDWICH

INGREDIENTS
For curd marination:
200 gms cottage cheese (paneer)
1 cup thick curd
1 tsp garam masala
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp chaat masala
salt and red chili powder to taste


 


For bread spread:
1/2 cup mayonnaise
1/2 tsp garlic herb (bread seasoning)
3-4 cheese slices or processed cheese
 
4-5 bread slices

IF YOU DON'T HAVE BREAD SEASONING AVAILABLE YOU CAN MAKE IT AT HOME BY MIXING THE FOLLOWING INGREDIENTS:
1/2 tsp oregano
1/2 tsp crushed garlic or dry garlic
1/4 tsp paprika (optional)
1/2 tsp basil
1/2 tsp red chili flakes


METHOD

Cut paneer slices thinly of any desired shape and keep aside for 15 minutes so that all the excess water comes out.

Take thick curd in a bowl, if you are using homemade curd then keep in strainer for 15 minutes so that all the excess water comes out, we don't need hung curd or marination will become too thick.

Coat paneer slices well in curd and keep in fridge for 15-20 minutes.

Heat some oil in pan, saute panner on high flame till little brown, don't overdo it or panner will become very hard.

Take bread slice, trim the edges spread cheese spread, sprinkle bread seasoning, keep panner slice, cheese slice.

Take non-stick pan, put some oil, keep bread slice, cover with lid and cook on low flame till cheese melts and bread becomes little crisp and brown from down.

Cut into triangular shape, garnish with some more seasoning and serve.

2. Cut paneer into desired shape. Keep these slices in cur and keep in fridge for 15-20 minutes.










3. Heat some oil or butter in pan, saute on high flame till little golden in colour. Don't overdo or paneer will become hard.










4. From both sides.










5. Trim the edges of bread slices, put cheese spread, sprinkle bread seasoning.










6. Keep paneer slice and pieces of cheese slice.










7. Cover with lid and cook till cheese melts and bread become crisp.
















8. Serve.



9. Or pack in tiffin boxes of your kids.
